Recipe: Single Serving Coconut Flour Pancakes

Another low-carb coconut flour recipe. I like them. I like eating lots of fat and some fiber. They keep me full until my next meal..... and I love the taste of coconut anyway. I eat other things besides coconut though- I use pea protein in the next low carb breakfast recipe I plan on posting.

Ingredients:
-2 eggs
-2 tbsp butter, melted
-1/4 cup coconut milk (but any milk is fine)
-Sweetener equivalent to 2 tbsp sugar
-1 tsp vanilla extract
-1/4 tsp salt
-3 tbsp coconut flour
-1 tsp baking powder

Directions:
-Whisk together wet ingredients and dry ingredients in separate bowls.
-Whisk dry ingredients into wet ingredients.
-Allow the batter to rest for about 10 minutes before cooking.
-Plop your batter onto a hot greased skillet and cook it. Like a pancake. You know.

Notes:
-It's good with berries in the batter.
-If your batter is too thick to whisk in step 2, add more milk, and reduce the flour next time. Your flour is too absorbent.
-Here is the equivalent regular flour single-serve recipe I make for my girlfriend who isn't into the weird diet food.
