Recipe: Raspberry Cream Protein Breakfast Bake
In my household this falls under the category of Weird Diet Food Only Tesla Eats. It's a weird hybrid of an oatmeal and a baked custard. I enjoyed it enough that I wanted to record it down for myself though!
I finally solved two problems in my breakfast life:
1, how to put whey protein in oats without it clumping. I just needed to add it to cold liquid and then cook again.
2, how to enjoy steel cut oats when I do Not have it in me to wake up early enough to actually cook them for breakfast... bake them the night before!
Ingredients:
-1/2 cup steel-cut oats
-2 cups water
-1 cup heavy whipping cream
-1 cup 2% or whole milk
-2 eggs
-2 scoops (62 grams) vanilla whey protein
-1 tbsp vanilla extract
-Sweetener to taste (I used 1/4 cup sugar equivalent of erythritol. I don't like overly-sweet so this is probably a minimum.)
-pinch salt
-2 cups raspberries (preferably frozen)
Directions:
-Pre-heat oven to 325 F
-Boil oats and water for 10 minutes, then remove from heat. (allow to cool for at least 5 minutes before adding egg mixture.)
-Whisk together eggs, milk, whey protein, sweetener, vanilla and salt
-Whisk cream into oats
-Whisk in egg mixture, combine thoroughly
-Stir in raspberries
-Pour into 8x8 square cake pan and bake for 60 minutes or until set (will still be kind of jiggly when hot)
-Chill overnight, cut into 4 servings in the morning!
Notes:
-The heavy cream probably isn't necessary but 1) it tastes good 2) without it, it actually doesn't have enough calories for my breakfast. The other ingredients are too light.
