I've decided dreamwidth might be a good place to back up recipes I have scattered all around the internet, and in notebooks and scraps of paper around my apartment. I forget to record or just misplace my recipes too often!

sunbutter is more oily and less firm than a peanut butter so I reduced the fat and increased the flour to help them keep a ball shape
-4-6 tbsp coconut flour (lower range for a more dense and buttery cookie, higher range for a more crumbly, cake-y experience)
scoop into balls. put ur balls on the pan. bake ur balls at 350 F for 12-15 minutes.
NOTES TO SELF:
future thoughts: try with cinnamon? cocoa?

-powdered sweetener, to taste (I use 2 tbsp erythritol- I am pretty sensitive to the sweetness of fake sugar and don’t like my baked goods overly sweet. the original recipe calls for ¼ cup and that’s probably good if you like things on the sweet side)
-1 cup no sugar added sunflower seed butter
-2 tbsp butter, softened
-2 eggs
-¼ tsp salt
-1 tsp vanilla extract
just mix that shit up don’t give a fuck about overmixing it’s gluten free don’t gotta worry about those weird stringy proteins wonding around everything

try the original recipe with soy butter
try with apple slices on top
the lower range of flour would probably be the best for those peanut butter cookies where u put a chocolate or dollop of jam on top
