Recipe: oat flour pie crust

I make pies for most holidays. I don't really have any pie filling recipes of my own- except quiche which I will post later... but my family loves my pies in particular because they always use my own crisp, flaky crust recipe.
Recipe under the cut!

Ingredients:
-1/2 cup all-purpose flour
-5/8 cups oat flour
-1/2 tsp salt
-1/2 tsp sugar
-8 tbsp butter, diced and chilled
-3 tbsp ice-cold water

Directions:
-Whisk together flours, sugar and salt.
-Cut in the butter using a pastry blender or food processor
-Mix in the water until the dough holds together without cracking
-Refrigerate for at least half an hour before rolling out
-Use as needed!

Notes:
-Oat flour is over-priced. If you have a good blender or food processor you can make it yourself out of quick oats.
-To blind-bake, bake at 425 F with pie weights in, for 25 minutes in using a glass or ceramic pie plate, or 15 minutes if using a metal pie tin.
-This recipe for the filling is the thing my family always requests for Thanksgiving. Try it with my crust if you like honey & salted caramel flavored things and you love yourself.

Mmm, sounds good! Might need to attempt at some point....
If I try it, I'll definitely be making my own oat flour, yeah. I usually have quick oats on hand anyway.
